How it all began
It started twenty years ago in a busy Montreal apartment — with a dream of a quieter life, a bed and breakfast, and space to breathe.
After years in the Laurentians learning to slow down, David and Jason were drawn to Niagara for its historic charm and wine country beauty. Three years of searching led them to the perfect house. A year of renovations later, Panache B&B opened in 2013.
Over seven years, what began as a traditional B&B quietly evolved into something deeper — a true retreat focused on relaxation and self-care. In 2020, they honored this shift with a new name: Gatekeeper's Retreat.
Simultaneously, another longing had taken hold: the pull toward water and open sky. After three years of searching, they found a Lake Erie beach cottage with a lighthouse framed in the window. Lightkeeper's Retreat was born.
Throughout this entire journey, David cultivated a parallel passion: herbalism. What began as personal interest became a formal Herbalist certification. The apothecary emerged as the natural bridge — a shared philosophy of self-care and natural wellness.
From this slow transformative, quasi alchemical process, Sapience was born: Self-Care focusses retreat, apothecary and philosophy all woven into one.
Our Philosophy
Sapere Aude
The root of our philosophy emerged from the Latin phrase ‘‘Sapere Aude’’ meaning ‘‘Dare to Know (thyself)’’. From there Sapience brings us back to English and French, derived from ‘‘sapientia’’, a Latin word meaning wisdom, self-awareness, understanding and knowledge. Sānāre, meaning ‘‘to heal’’, was chosen to be the natural bridge defining our herbal apothecary.
Beyond the names and concepts, we simply believe that true healing blooms from within. Our role is not to fix you (you are not broken) but to help you remember how to create the conditions that supports your own innate capacity for healing and renewal.
Whether you're relaxing into our library in Niagara-on-the-Lake, slowly waking from the cottage to the lighthouse on Lake Erie, or sipping a custom herbal blend crafted just for you, our invitation is the same:

Meet your hosts
David's path has been delightfully non-linear: from Natural Sciences to Music and Arts in college, to a cabinet-making diploma (surprisingly useful!), to creating a summer theater, to years of community service in Niagara-on-the-Lake and finally becoming a certified Herbalist.
Today, he brings this eclectic background to everything at Sapience — from the handcrafted details in each room to the personalized herbal formulations created in the apothecary. His approach to wellness & herbalism is both deeply researched and intuitively guided, always honoring the guest's own wisdom about their body & mind.
When not in the apothecary, you'll find him experimenting in the kitchen, reading or dreaming up the next Sapience evolution…
